Icelandic Pancakes
- 3 ¾ cups (9 dl) flour
- 3 tbsp sugar
- 6 ⅓ cups (1.5 liters) milk or soy milk
- 1½ tsp baking powder
- 6 eggs
- 1 tsp vanilla extract or vanilla sugar
- 90 g butter, melted
Ingredients
- Mix all the dry ingredients together in a bowl. Add about half of the milk and whisk into a smooth batter.
- Mix in the eggs one at a time, whisking well between each addition. Add the remaining milk and finally the melted butter. The batter should be very thin.
- You can replace part of the milk in the recipe with water or even cold coffee.
- Pour a small amount of batter onto a lightly greased pan and cook until the surface looks mostly dry. Flip the pancake and cook the other side briefly until lightly golden.
- In Iceland, pancakes are traditionally made in special pancake pans, and it is common to cook them on two or three pans at the same time.
